Dinner Suggestions

Does anybody have good ideas for meals that can be made Sunday and then put in the fridge or freezer for leftovers the rest of the week? By the time I get off work I'm usually ravenous and too tired to cook. I don't have a slow cooker right now (I'm in student housing and not allowed to bring in extra appliances like that).

Here's the potentially tricky part - I'd prefer vegetarian/vegan food, and pasta's no good either.
